Want To Try Something Different But Delicious?

I experimented the other night taking a boneless chicken breast, cutting it into 1/4 inch cubes, mixing Red Curry Paste & Olive Oil in a fry pan to cook the chicken cubes. Then mixed the chicken with Fettuccini Alfredo in a casserole. Put the casserole in the microwave for 3 minutes and then served it up. I ate half for my dinner and the other half cold for lunch the next day.

I am quite fond of all the different curries, but this combination of a smooth textured Fettuccini Alfredo with the mild heat flavor of the curried chicken was delicious I thought.

I think I'm in Florida, but I'm not sure any GPS blew away.

I made a soup today with a can of cocoanut milk, some chicken broth, mushrooms, shrimp, a little fish sauce, lime juice and some curry/lemongrass/tumeric seasoning. Served it over jasmine rice. Really rich and totally destroyed my diet. It was worth it.
If we're ever in a situation where I am "the voice of reason", then we are in a very, very bad situation.
