I experimented the other night taking a boneless chicken breast, cutting it into 1/4 inch cubes, mixing Red Curry Paste & Olive Oil in a fry pan to cook the chicken cubes. Then mixed the chicken with Fettuccini Alfredo in a casserole. Put the casserole in the microwave for 3 minutes and then served it up. I ate half for my dinner and the other half cold for lunch the next day.
I am quite fond of all the different curries, but this combination of a smooth textured Fettuccini Alfredo with the mild heat flavor of the curried chicken was delicious I thought.
