    Best Zuchinni Muffins/ Sweet Bread EVER!!!

    This is for those of you who are growing zucchiniís or for those who love a good muffin or sweet bread. These are guaranteed to raise an eyebrow and put a smile on someoneís face.


    Itís a great way to spice up zucchini for those non veggie lovers but itís also a great way to use up those zucchinis from the garden because these muffins / sweet loaves arenít only incredibly good but they freeze really well. Once itís thoroughly cool just chuck it in one of those reusable freezer bags and freeze for when youíre ready.


    The first fresh grown zucchiniís were given to me by my neighbour down the road who Iíve known for twenty years. I made some muffins out of them but none of them quite made it.


    These mini loaves here were made from zucchiniís grown from our garden and the recipe is the best recipe youíll ever try in this category. They arenít overly sweet but sweet enough.


    1 1/2 cups all purpose flour
    1/3 cup sugar
    1 tsp baking soda
    I tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/2 tsp salt




    1 egg lightly beaten
    1/4 cup oil ( vegetable, avocado, or coconut)
    1/4 cup unsweetened apple sauce
    1/4 cup milk or coconut milk
    1 tbsp fresh lemon juice
    1 tsp vanilla extract
    1 cup shredded zucchini


    1/2 - 1 cup semi sweet chocolate chips
    1/2 cup walnuts


    1/.Preheat oven to 350
    2/. Either grease or use 12 muffin liners
    3/.Mix dry ingredients together
    4/. In separate bowl mix wet ingredients together.
    5/. Fold in chocolate chips and walnuts
    6/. Fill muffin tins 2/3rds full and bake from 20 to 25 minutes or until top springs back.


    This can be made into 2 mini loaves or one bigger one.
    Mini loaves - 35 minutes bake time
    Large loaf - approximately to 50 minutes

    P.s. My three good neighbours ( in our area ) got Zuchinni bread including the lady who gave me the first Zuchinni.

    Keesha the bread looks so delicious. I didn't grow any zucchini this year but will save the recipe for next year. I have to eat gluten free but I'm sure with my gluten free flour it will turn out fine. I've done it with banana bread so this should work also. Thanks for sharing.

    Substituting gluten free flour might work with this but I can post a gluten free version later on.
    Ive actually got some very nice gf recipes to share.

    Zucchini are one of my favorite vegetables, I've thought about making a zucchini bread in the past, this looks really good and might be just the encouragement I need. Thanks for sharing.

    Usually I'm trying to use up zucchini but this year our crop was none. I had to go buy some and make zucchini bread. It didn't seem right to let summer go by without it.
    Your recipe sounds good!

    Hey April. Zuchinni never use to be a favourite of mine but since Iíve been growing it, it has.
    Iíve got a load of them and besides this bread I really enjoy making Zuchinni sticks but using gluten free flour.
    The outside stays nice and crunchy and the inside squishy warm good. I love it.

    If you love zuchinni and sweet bread , youíll be doing the happy dance with this one and itís low fat with minimum sugar. The apple sauce gives it loads of moisture so it stays fresh forever. Each slice can be reheated for the gooey melted chocolate goodness.

    Seriously this recipe is so good it could be made into small loaves and freezed to give away as Christmas gifts.
    They wonít be scrunching their noses at you I promise.
