What are you cooking or baking today?

Ugh... I seem to have forgotten about hot weather messing with my eating. This time of year I cruise the fridge and pantries - am hungry but don't know what for so I wind up snacking throughout the day.

Just picked up more salad fixings and potatoes, but could really use some inspiration. Need to go through my recipe files anew.

One can only eat so much salad.

In desperation I changed supper plans. Fried up one of the two packaged chicken souvlaki skewers. Threw in some cooked carrots. A bit of lettuce with cherry tomatoes and marinated red onions on top. Some potato salad and pita bread with hummus. Instead of not having anything, I had too much. Tomorrow‘s lunch will be similar.

No...never heard of it..are these American ?
I am kind of surprised they are not sold over there. Seems many of the most popular products we have are available there. They are very good. I used to buy them for my son when he was younger.

We both love waffles but know we make them from scratch at home. It is one of the few things he wanted to learn so he could have them anytime.

I'm the same! I made egg salad and tuna salad, to go with all the salads I will be eating.
 
I've been making homemade waffles ever since we're back home, from, wait for it, a special closing down bookstore in Ontario.

Pillsbury cooking book 🤣🤣🤣 it still my favourite cookbook overall! I learned so much with hubby and munchkins

Tonight I'm doing Taco Salad.
I've got lettuce, tomatoes, black beans, cheddar, green onions, and I'll crumble a taco shell or two
Then a little mayo, ketchup, and salsa mixed together for dressing
Quick, easy, healthy, and tasty
I'm having salmon tonight, but Taco salad is def on my menu plan for the upcoming weeks.

No they're not sold here..In actual fact we have very few American foods for sale..aside from peanut butter laden sweets(candy) et al...

We do have our own brands of waffles of course..
 
Yesterday afternoon I wound up making a big quinoa and brown rice salad (didn't have enough of either in the freezer so combined them). It's sort of my take on the Jennifer Aniston salad that made the rounds a couple of years ago. I add small diced cucumber, celery and bell pepper, chopped fresh mint and flat parsley, defrosted (uncooked) baby peas and Trader Joe roasted corn, a drained can of garbanzos, lemon juice, plus S & P.

Add a little salad dressing or homemade hummus at the table. Delicious, satisfying and healthy.

Anyone remembers that jingle for Kellogg's Eggo Frozen Waffles, just drop them in the toaster. Whoa!

When the kids were young, on weekends I'd make up huge batches of waffles or pancakes, cooling then freezing some between waxed paper layers so they didn't stick. Pop them in the toaster on a hectic school morning and voila! Breakfast was not only handled, but if we were running late they could hold them in a napkin and eat them in the car.

To this day, when making Ws or Ps I do a double or triple batch so some are stashed in the freezer. Healthier version nowadays. Ingredients include rolled oats, whole wheat flour, flax eggs, diced fruit, unsweetened applesauce and walnuts. I don't bother with syrup but DH & the grandkids use it.
