Kinda simple.
Ingredients............
Flour:
Eggs:
Buttermilk:

Well, I was out of flour so beat feet to the store. While there, I had an attack of the lazies and thought... why not just buy a box of yellow cake mix. Yeah, that was my thought until I read the ingredients. :eek:
Enriched Bleached Flour (Wheat Flour, Niacin, Iron, Thiamin Mononitrate, Riboflavin,
Folic Acid), Sugar, Leavening (Baking Soda, Calcium Phosphate, Sodium Aluminum Phosphate),
Contains 2% Or Less Of: Canola Oil, Dextrose, Salt, Corn Starch, Propylene Glycol Esters
Of Fatty Acids, Natural And Artificial Flavor, Mono- And Diglycerides, Cellulose Gum,
Cellulose, Xanthan Gum, Sodium Stearoyl Lactylate, Red 40, Yellow 5, Citric Acid And
BHT (Antioxidants).

needless to say, I bought some flour and went home and made my own.

Yeah, cakes are pretty easy to make, and way healthier than box mixes. Cheaper, too. Plus, you can add things like nuts, chocolate bits, and certain kinds of fruit.

It'll turn out yummy, I'm sure.

(Other than his Aunt Mags cake which lives on through the family) She even named it after the hubs, (Jack's coco cake) If was a very rich dense chocolate cake and the frosting was a cooked version, like a fudge with a heavy dose of pecans. I inherited two of the little pans she always made just for him to take home after every family function.

I had the recipe in her church cookbook but the book was somehow lost after he passed. I think it was thrown out or stolen (haha) by a family member. I have had so many people in the house since he died. Everyone thought they were helping by cleaning my cupboards and getting what they thought were not needed out of the house. Lots of things were lost when I was in bed griefing. I never said a word but I am still angry to this day for some of those missing items.

Try this one.

Fudge Cake

2 cups granulated sugar
2 cups all purpose flour
1t baking soda
2 sticks margarine
1 cup water or leftover coffee
4 T unsweetened cocoa (I use heaping tablespoons for a richer flavor)
2 beaten eggs
1/2 cup buttermilk *
1t vanilla

Bring margarine, cocoa, and water to a boil.

Combine with dry ingredients and add eggs, buttermilk and vanilla.

Bake in greased 13x16 sheet pan for 20 minutes at 400f. Test with toothpick. Cool in pan.

* substitute 1t vinegar and 1/2 cup whole milk for buttermilk. Let it sit while you are preparing the rest of the ingredients so it can ‘sour’.

Topping

1/3 cup milk
1 stick margarine
1/4 cup cocoa
1 pound powdered sugar

Broken walnuts

Bring milk, margarine, and cocoa to a boil, add powdered sugar and beat until smooth. Spread on cake while warm. Top with chopped walnuts.

@Aunt Bea, that sounds really good. Sounds close to Aunties but no coffee was involved, I remember that much. Also her recipe had a little cinnamon in the batter. I much prefer walnuts to the pecans so that is a good substitute. Thanks for sharing!!
