I dunno how it happened, but over the past month or two, it's been "Gramma's making dessert tonight" on Sundays. Methinks my posse has now decided that I'll always make dessert on Sundays even when we don't have a big Sunday dinner. DD and DGD have designated Sundays "Dessert for Dinner" days. No more Sunday dinners, just dessert.

You'd think after years and years of making one kind of dessert or another, I'd have a whole cookbook full of recipes. Nope. I plumb ran out of ideas and don't wanna fix the same thing more than once every couple of months.

It's gotta be something that's no trouble to make, and only makes enough for each of us to have one serving. I had the bright idea of making apple upside down cake...like pineapple upside down cake. Is there such a thing? Chef Extraordinaire Google has the answer to everything! Yup. Somebody has already invented apple upside down cake.

It's what for "dinner" next Sunday.

I should open a shop and call it "(Get Your) Just Desserts."
 

Desert for two, correct?
I have made some of her cookies and they were requested again especially white chocolate chip. Do not get scared when you look at the mixing bowl. It is not a dirty bowl but dough for small quantities:) Airfryer baking did not work for me.

On the homegrown side - crumbs, crumbs, crumbs.
1 part butter
1 part white sugar
Pinch of salt
2 parts flour
Depending on fruit a bit of chopped nuts or cinnamon
Mix until crumbly
Preheat oven to 350F
I would go with 1 cup flour, 1/2 cup butter, 1/2 cup sugar and 1 cup fruit.
Peeled/sliced peaches with a tea spoon of sugar and cornstarch, plums, blackberries, pears, apples (need to be a bit precooked - mikro).
Well buttered ramekins or four muffins. WELL buttered. Pat 2/3 of crumbs in as bottom, add fruit, crumble rest of dough on top. 15 minutes, check, maybe 2-3 more. Let cool a bit. Freezes well. Let me know and I have a real recipe this is based on.
 
have you had Eton mess... ? Traditonally made with strawberries and blueberries

..but you can use any fruit you like and you can add nuts like Pistachios..... and have several ways to serve it...

I would probably go with apple crisp or crumble.

Especially if the oven is on for other parts of the meal.

If peeling apples is too much work then I would go with a frozen berry version similar to this recipe.

Scale the recipe to suit the number of serving or reheat the leftovers for breakfast.

Serve warm topped with premium vanilla ice cream. 🐷🐷🐷

it is basically a kind of spin on german chocolate but there is no icing, if you will. You spray your pans and then add chopped pecans, I used walnuts, and shredded coconut. The cake batter goes on top of that. Then you whip cream cheese, butter, vanilla and powdered sugar to like a creamy paste and drop spoonful's of that onto the top off the batter.

The batter rises as it bakes and surrounds the cream cheese, with a lot of crack, hills and valleys. My son called it volcano cake.
