So yesterday I made guacamole to have with dinner, and … duh... forgot to serve it. So there it was in the fridge this morning. Dave made some toast, smeared it with the guac, (kind of like avocado toast), added some salsa, and topped it with a fried egg. He said it was absolutely delicious. Tonight we had a meeting to attend, so in the interest of a fast supper and an easy clean up, we had a clean out the fridge night. He offered to make me what he had for breakfast with the remaining guacamole. OMG, it was soooo good. The crispy toast, the cool, smooth guacamole, the spicy salsa, and the unctuous egg yolk combined to make a fabulous treat. Dave says he sees more avocados in our future!
