And furthermore...about pumpkin everything

pumpkin cranberry loaf

Now that's something I never considered combining! (Those 2 recipes were always separate ones. ) But I'd be glad to taste some when you bake it! :D

What I am hankering after, is chocolate chips baked into either Pumpkin 'brownies' or pumpkin cookies, or bars or even in Pumpkin bread.

Pumpkin and Chocolate combined well.:giggle:

I think I'll have the Cranberry loaf, traditional, or with orange juice/peels/bits, in it.....that's a great combo too,
But again, I'll have it however it comes, if someone else is making it!:)

Ingredients

  • 1 c flour
  • ½ c butter softened
  • ¾ c pecans chopped
  • 8 oz cream cheese softened
  • 1 c powdered sugar
  • 3 c whipped topping divided
  • 2 ½ c milk
  • 3 pkgs white chocolate (or vanilla) instant pudding mix (3.4 oz size)
  • 15 oz can pumpkin puree
  • 1 tsp pumpkin spice

Instructions

Layer 1

  • Mix flour, butter and ½ cup pecans together. Press into a sprayed 9×9 OR 9×13 pan. Bake for 15 minutes at 350 degrees, then remove and let cool.

NOTE: If you are using a 9×13 pan, or would like a thicker crust, add an additional ½ cup flour, ¼ cup butter and ¼ cup chopped pecans.

Layer 2

  • Blend cream cheese and powdered sugar, add 1 cup of the whipped topping, then spread over cooled crust.

Layer 3

  • Mix milk, pudding mix, canned pumpkin, pumpkin spice and 1 cup whipped topping until smooth. Spread over top of layer 2.

Layer 4

  • Spread remaining 1 cup of whipped topping and sprinkle pecans.
  • Let chill for 3 hours or until set. Serve chilled, and ENJOY!"

Wow, only one cup of flour, with all of that quantity of moist stuff! (butter, cream cheese, pumpkin puree, milk.... )
I had to guess this wouldn't be baked, and instead is frozen.

It all sounds delicious for an overboard treat. I'll have to peruse that recipe, more closely!
Whipped topping? It surely wouldn't need any, but have a ball! :D

Then I started thinking about what they have in them that they don’t have to be refrigerated. I’ll stick with making my own.

Well, once a year only, probably won't kill someone who enjoys them.:)
Probably won't. I'm not entirely certain about that. :geek::LOL::ROFLMAO:
