Anyone know what to do with ground roast pork?

I save everything. Small pieces of pot roast goes in stew, I have a million recipes for left over chicken and turkey,left over meatloaf, but I just have nothing for ground roast pork. We don't care for left over roast pork except for a sandwich now and then so I ground the leftovers thinking I could find something to do with it. I was thinking of mixing it up with some BBQ sauce and serving it on a bun. Any ideas?
 

That's what I do. Mix with bbq sauce and serve on buns with sliced sweet onions and pickles. Add some potato salad and/or coleslaw and its lunch or early dinner.
 
In warm tortillas, put in the warmed pork, some salsa and grated cheese to taste.... You can also spray both sides of the tortilla wrapped pork with olive oil, put it in the oven set on broil, turn over to crisp the other side and make chimichungas.
 

Biown and add to a can of soup to make a more hearty dish or add to a veggie stir fry or to fried rice. Add a binder (bread crumbs, egg), shape into croquettes, dust with flour, brown in a little oil in hot skillet and serve with a little Mornay sauce.
