It’s not that I don’t eat cheese, it’s just that I don’t have that type. Usually just cheddar or mozzarella. In the spring I buy feta, so could use that.
Ah, I mistakenly thought you were dairy-free, @Jules. I obviously have you confused with someone else. Now I wonder who that is. 🤔

I don't ever have Queso Fresco on hand, so I substituted a mix of Monterey Jack and Cheddar. I think you could sub whatever cheese you like, and it would be good! You know that feta is very salty, so if you want it to taste more like queso fresco, you might want to rinse it. I know that sounds weird, but it works to get rid of some of the salt. Just pat it dry before you use it. 🙂

Actually I didn’t know the exact translation of this term, just that it isn’t something ever mentioned in BC. I’m easy going on improvising on recipes and this one seems like a winner for that.

Don’t worry about getting me confused with someone who doesn’t eat dairy. There’re so many of us here, it’s hard to keep us all straight.

Queso fresco reminds me of a somewhat drier Mozzarella.
 
Made this on Friday. I thought it needed a few more potatoes & seeded jalapenos (for flavor, not heat). I would use country ham for more flavor since the sugar cured ham I used was too bland. It was easy & quick to make. Just did it from start to finish in my cast iron so very little mess.
