Brussel Sprout recipe I heard about

My coworker had a brussel sprout salad this week that she loved. She didn't make it but found out the general recipe. I don't know the proportions. I also don't know if the brussel sprouts were cooked or not. So, does this recipe sound familiar to anyone here, if so, can you fill in the missing info (cooked or not? proportions?). Also, is 'shaved' the same as grated? Thanks!

Shaved brussel sprouts
chopped up granny smith apple (or apple type of your choice)
celery
pumpkin seeds
dried cranberries (I think like craisins)
feta cheese (optional she said)
dressing: olive oil mixed with either grapefruit or lemon juice)
salt and pepper to taste
 

I prefer mayonnaise, myself. This is something that you put anything you like in it. Brussels sprouts and raw broccoli salads are similar in that there are raisins and seeds in them.

I put in some chopped red onion and sometimes minced red bell pepper, shredded carrots, anything you like.

You could thin slice your sprouts with a sharp knife or whiz in the food processor. You can even buy them already shaved and bagged..

Shaved Brussels sprouts... I would say uncooked for sure.

As for amounts used of each, I would add apple to taste, and same with the celery.

Related to the pumpkin seeds and dried cranberries, to taste as well.

I'm not much for feta, but do love Asiago, so would go with Asiago cheese instead.

As for the dressing, salt, and pepper... to taste as well.

I don't think one could go wrong in making this salad.

Note: Grating the Brussels sprouts would only turn them to mush. The idea behind shaving them is to provide slivers of sprouts in the recipe.
 

Mix your dressing on the side. Add and toss by spoonfuls until you have it to your taste.
I assume you have a slicing attachment on your food processor, otherwise I'd buy it bagged. It's easier to slice broccoli than Brussels sprouts I think.
 
In my salad recipes collection, I have this one.

  • 2 1/2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons dijon mustard
  • 1 small clove garlic, minced
  • salt and pepper to taste
Depending how long the salad will be stored, I wouldn‘t put the apple in until just before serving.
 
Be honest...do you still have the teeth to chew all that raw stuff? I would have to put it in the blender and turn it into baby food before I could eat it!
