We have a buffalo farm near us, regularly eat the meat.
I'm one of the few people in the UK who can get local mozzarella!
Does it taste like beef? Tender?
Obviously similar, but different, like venison and reindeer or mutton and lamb. Darker meat than beef, and healthier, because it really is lean. Like venison, when making sausages they have to add fat (normally pork).
Tenderness much the same as beef, depends a great deal on the butchering. Since the buffalo is obviously a premium product, is is the same as premium beef. It can be cut with a fork!
It's incredible to see these animals close up - without being in a zoo.
I know, it is intense to see them close up in their natural habitat, we haven't seen any big animals like elephants in the wild, but we have see some large buffalo, moose, elk and grizzly/brown bears. Lots of respect for these beautiful creatures!
