Buffalo Crossing in South Africa

We were driving through Alberta Canada years ago and had to stop for a herd of buffalo crossing the road, awesome to watch them, so beautiful and powerful.
 
We were chased by a cape buffalo on a game drive in Uganda. He thought we were after his harem. Had a close call with a angry elephant once as well.

It's incredible to see these animals close up - without being in a zoo.
 

Does it taste like beef? Tender?

Obviously similar, but different, like venison and reindeer or mutton and lamb. Darker meat than beef, and healthier, because it really is lean. Like venison, when making sausages they have to add fat (normally pork).

Tenderness much the same as beef, depends a great deal on the butchering. Since the buffalo is obviously a premium product, is is the same as premium beef. It can be cut with a fork!

Sounds good although the only 'wild' meat I like is venison burgers. But then I haven't tried the sausages.

I know, it is intense to see them close up in their natural habitat, we haven't seen any big animals like elephants in the wild, but we have see some large buffalo, moose, elk and grizzly/brown bears. Lots of respect for these beautiful creatures!

The best part of living in Uganda was being able to easily do game drives or game walks. Game walks started before dawn and we were lead by a ranger with a rifle (to scare the animals away if needed). These were only in the national park that didn't have lions or elephants - had lots of cape buffalos, 6,000 zebras, impala, warthogs, etc. Otherwise it was dawn game drives in the other national parks. It's a photographers heaven!

I've seen black bears up close in the Smokies. Once when were hiking a couple of them came down to the trail to get to the water. I was a bit nervous!

My brother has seen moose up close in Maine where he has a house.

I haven't seen elk or grizzly.
