Chickpea Curry

One of my favorites:

1 onion, diced
1 carrot, diced

1 green pepper cut in strips
5-6 cloves garlic, minced

1 Tbsp curry powder
1-2 Tbsp fish sauce
Handful Thai basil leaves

1 cup vegetable broth
1 can coconut milk (lite works well)
Siracha sauce
Honey, about 1 Tbsp

2 cans chickpeas, drained. I love Goya brand

Salute onion and carrots in coconut oil 1 min or so. Add green pepper strips and salute another minute then garlic another minute or so.
Add the curry powder, fish sauce, and Thai basil leaves. Stir together then add the vegetable broth, coconut milk, Siracha and honey to taste.
Add chick peas and bring all to a simmer and cook a few minutes until fragrant.

The spices, sauce, honey should all be to your taste. I've added some cooked chicken or shrimp.
Thai basil is easy to grow and pretty.

Sounds pretty good. I've never tasted fish sauce, though, not sure what it would taste like as I'm not fond of fish.
