Corn on the cob: a quick question

I had corn on the cob once that was smeared with a little mayo, sprinkled lightly with chili powder and a spritz of lemon juice and roasted on the grill. It was delicious but I'd never be able to get the Spousal Equivalent to try it.

I see "Mexican Street Corn" at festivals but haven't ever tried it. Maybe it's like the above.
Another thing the Mexican street vendors do besides the mayo-chili powder & lime is to roll the corn in grated parmesan cheese. Good stuff.
 
I husk the corn and drop it into a pan of simmering water for a few minutes.

If you are only doing a few ears, a covered frying pan filled with water is fine. The corn will steam and cook without being completely submerged.

Leftover corn off the cob, fried in butter, is a great breakfast treat.

Hmmm, I've never done that, have done potatoes in the microwave wrapped with a wet paper towel. :unsure:
I cook asparagus in the microwave, lined up on a paper towel and loosely covered with a paper towel. I set the power at 60% and the spears are tender in about 3-4 minutes. I don't see why this wouldn't work with corn on the cob. I'd reduce the power, to make sure the kernels don't explode, and then cook 'em for a few minutes, check 'em, cook a few minutes more, etc.

I'm with Aunt Bea. Husk the corn, get rid of the silk, and rinse it. Take a large frying pan that will fit both ears and fill it with enough water (about 1/2"-1") to steam the corn. Bring the water to a boil with the lid on then drop in the corn. Cover and cook 5 minutes. Done.🌽
 
We can fit 3 ears of corn on a plate in our microwave, cook for 3 minutes per ear on high. I get the job of husking it, which I do right away under running water because it's too hot otherwise. Very easy to clean and remove the silk once it's cooked. Never had any problems with exploding kernels or burning.

I like it with butter and salt or just a little salt or plain.

I usually go thru a half dozen ears myself.

I like me some good corn on the cob.

This thread is making me hungry !
 
I would cook the chicken and the corn both on the grill leaving the husk on the corn. Just butter when dish ready.
For a smokier flavor, just soak a couple chunks of hickory or mesquite and roll them up in foil with the ends open.
When all is done, nothing to wash and it all tastes great.
 
It is probably not the most efficient way to cook corn if you are cooking more than a couple of ears. In that case, it's faster and easier to steam or boil.

But since I'm often cooking for one, and I have the patience of a hummingbird, I like the idea of quickly cooking one ear of corn in the microwave.

 
All great cooking suggestions, so in a nutshell we have:
Boiling on the stove top.
Baking, wrapped in tinfoil with butter(of course).
Microwaving- Haven't tried that yet but I will give that a go.
BBQing on the grill
Husking, or leaving the husk on during cooking

I ended up boiling on the stove top, added just a pinch of salt, low heat for 20 minutes or so. Kernels nice and firm, tender. Tomorrow morning am stopping by and picking up several more ears, one of the best produce items this week.

I could boil them in water with a pinch of salt or...smear butter on them and wrap in tinfoil and put them in the oven, which I'll be using anyway to cook some chicken thighs.

What would you do?
Pass, had all teeth removed (Funny how Mom & younger sister were both daily brushers) and dentures suck, so I buy canned corn or creamed.

But I used to SOAK my corn in butter.

We had some earlier this year and I cooked in the instant pot. It was excellent. Might have been for 2 minutes but I'd have to look it up again to be sure.
