Cornstarch Butter Cookies Recipe

These Cornstarch Butter Cookies are delicious!
I've already prepared several variations of this recipe.

Cornstarch Butter Cookies

Cook Time: 10 Minutes
Yields: 41 cookies

1 cup cornstarch, sifted

1 cup all-purpose flour, sifted

1 cup granulated sugar, sifted

1-1/2 sticks of butter (12 Tablespoons), at room temperature

1 large egg

1 teaspoon vanilla extract

1.) Line 3 large baking sheets with durable parchment paper, then set them aside.

2.) In a large bowl, add the sifted cornstarch, flour and granulated sugar.

3.) In the same bowl, add the butter, egg and vanilla extract. Using an electric hand mixer with paddle attachments, mix on low speed, then gradually increasing the speed until ingredients are well combined.

4.) Now use a small Pampered Chef Cookie Scoop, to scoop up the dough and place on baking sheet. Be sure to space the cookie dough at least 1-1/2-inches about.

5.) Then using a fork, lightly press onto each ball of dough to display a crisscross pattern.

6.) Place baking sheet in oven for 10 minutes. Cookies will be done when they appear to be light golden around the edges.

7.) Transfer baked cookies to a wire rack to cool completely. The already-baked cookies were about 2-inch in diameter. If desired, before baking the cookies, you can sprinkle the tops of cookie dough with colored sugar. Or, after baking and completely cooled, frost and decorate cookies with your colored sugar or decorative holiday sprinkles.

By the way, when preparing those Cornstarch Butter Cookies, as well as the other variations of corn starch cookies, I used the Great Value Corn Starch.

I remember making something similar called melting moments.

Try swapping the vanilla extract for an equal amount of almond extract.

We dusted them with powdered sugar.

Aunt Bea, actually I've thought about substituting almond extract for the vanilla extract. As for dusting the cookies with powdered sugar? I will definitely do that as well. And thank you for the suggesting that.​
