Creamed Chipped Beef on Toast

Also known as “S.O.S.” in less polite company, this dish was a staple in many households. Grandma would whisk together milk, flour, butter, and those thin slices of dried beef until it thickened into a gravy-like mixture. Nutritionists today would probably wince at the salt content alone. But kids loved it because the creamy sauce soaked into the toast and tasted like pure comfort. It was warm, filling, and incredibly budget-friendly. Grandma considered it a complete breakfast, lunch, or dinner depending on the day.

The toast underneath always got slightly soggy, but that was part of the charm.

My father loved it and would occasionally make it for Sunday morning breakfast. Of course, chipped beef is traditional, but other kinds of beef can also be used. He didn't make it with dried chipped beef; he browned ground beef, drained it, seasoned it with salt and pepper, then added it to the béchamel sauce.

I liked it, but it wasn't my favorite for breakfast.

I have fond memories of having this for dinner. Haven’t had it since but I’d order it if it was on a menu.

Chipped beef is thinly sliced, salted, and dried beef that is often sold in jars or packets. It has a salty and slightly chewy texture and is a key ingredient in classic comfort foods like "cream chipped beef," where it is chopped and simmered in a creamy white gravy, often served over toast
 
Years ago I would make creamed chipped beef over garlic bread or buttery biscuits, man was that good.

Now when I see a plate of something like that I get a bit queasy because of how bad it is nutritionally, I would not want to eat it.
 
I have never even seen chipped beef in a store. As a kid we had creamed peas or creamed corn on toast sometimes. I made it a few times for old times sake - it wasn’t the same.
