Beef and Broccoli

1 pound boneless beef chuck roast, sliced into thin strips
1 cup beef consumme
1/2 cup soy sauce
... 1/3 cup brown sugar
1 tablespoon sesame oil
3 garlic cloves, minced
2 tablespoons cornstarch
2 tablespoons cooled sauce from the crock pot after being cooked
Fresh broccoli florets (as many as desired)
Hot cooked rice

Directions
1. Place beef in a crock pot.
2. In a small bowl, combine consomme, soy sauce, brown sugar, oil, and garlic. Pour over beef. Cook on low for 6-8 hours.
3. In a cup, stir cornstarch and sauce form the crock pot until smooth. Add to crock pot. Stir well to combine. (If your sauce is not thickening, try bringing your sauce to a boil on the stovetop with the corn starch mixture. Boil until your desired consistency is reached).
4. Add broccoli to the crock pot. Stir to combine.
5. Cover and cook an additional 30 minutes on high (the sauce has to boil for it to thicken).
6. Serve over hot cooked rice. (Brown rice is best)

Our crock pot has been gathering dust since we bought an electric pressure cooker some 10 years ago. I'll bet that recipe would be great in the pressure cooker...only faster. Thanks, I'll sure try it.

My wife puts chicken breasts and mild salsa in a crock pot and it simmers all day. Simple and is it ever good. The camper smells like a Mexican restaurant for a few days, but sure is worth it. Cha, cha, cha, no wait, that's not Mexican, is it? :)

SeaBreeze, your recipe looks delicious..I will try it soon. I'm always on the lookout for good crockpot recipes since I use mine a lot. I have three different sizes that I use according to what I'm cooking. This is a great thread that I somehow overlooked originally. I will post some of my recipes when I have more time later.

Never really cared for pot roast much until I came upon this recipe. This comes out moist and tender and the gravy is divine.

Pot Roast..make slits in it and stuff whole garlic cloves in the slits. Brown the roast in a heavy pot or skillet.

Mix together:

1 can condensed mushroom soup
1 envelope of Lipton onion soup mix
3 tablespoons Worshtershire sauce
1/2 cup dry sherry, beef broth or water (Sherry is my choice)

Stir in:
1 finely chopped small onion
1 8 oz pkg of fresh mushrooms (optional)

Pour on top of roast in crock pot and cook on high approx 3-4 hours depending on size of roast.

Sometimes I add in carrots and potatoes during the last hour of cooking.
