Fast, filling, quick meal

I wanted something different, so this is what I put together for dinner:

Take 2 medium/large tomatoes, remove the top, and scoop out the middle.
Bake for approx. 15 minutes in a 350F oven.

Next, break an egg into each tomato. (I prefer to poke the yolks).
Return to oven, bake for 15-20 minutes.

Add a scoop of grated cheese (I used colby/jack), and bake until cheese is melted.
 

Update: I noticed an alternative on a website- instead of using tomatoes, use avocados. This second recipe doesn't include cheese- it says to sprinkle salt-free lemon pepper on top.
Sounds interesting, think I'll try it!
