Pumpkin Spice Oat Bran Muffins

Tweaks: I add 1/2 tsp liquid stevia, an additional teaspoon pumpkin pie spice and add walnuts instead of raisins. These are delish with softened cream cheese.

Ingredients:

  • 1 cup pumpkin pureé
  • 1 cup milk of choice (unsweetened almond, coconut, cow's, etc)
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/4 cup virgin coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats (to yield 2 cups oat flour)
  • 1 cup oat bran
  • 1 Tablespoon pumpkin pie spice
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/2 cup raisins (can sub chocolate chips, walnuts, pecans, etc)

Sweet Potato Pie
Ingredients:
2 cups mashed sweet potatoes (one 29-oz. can, drained)
3 eggs, beaten
1 cup evaporated milk
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 teaspoon lemon juice
1/2 cup sugar
1 cup packed brown sugar

Directions:
Preheat oven to 350 degrees.
In a medium bowl, mix ingredients and pour into pie crust.
Bake at 350 degrees for 50-60 minutes,or until a toothpick inserted in the middle comes out clean.
Allow pie to cool.
Top with whipped topping and serve.

I frequently made this and brought it to the church coffee fellowship the Sunday before Thanksgiving and it was always mopped up. No coffee fellowship this year. :cry: Maybe I will make and bring to my aunt's house for Thanksgiving.

Apple Cranberry Crisp

(for main part)
2 pounds of firm apples, peeled cored and chopped (or 2 - 15 oz cans of apple pie filling)
3/4 cup dried cranberries
1 cup orange juice
1/4 cup white sugar
3 tsp cinnamon
1 tsp nutmeg

Combine dried cranberries and orange juice in a small saucepan. Heat until boiling, turn off and let sit until room temp.

Preheat oven to 375ºF.
Butter, or coat with non-stick spray, a 9 x 12" baking dish.
In a large mixing bowl combine apples, cooled cranberry mix (including any liquid), sugar and spices. Place this mixture in the prepared baking dish.

(for topping)
1/3 cup oatmeal (old fashioned or quick, but not steel-cut or instant)
1/3 cup flour
1/2 cup brown sugar (any type)
1/4 cup cold butter, cut in small pieces
1/2 cup chopped nuts (walnuts or pecans go well in this)

In a mixing bowl, combine oats, flour, brown sugar and butter. Mix with fork until crumbly texture forms. Stir in nuts. Sprinkle this evenly over the apple mixture in baking dish. Bake 40-50 minutes.
 

This two ingredient pumpkin muffin recipe caught my eye. I haven’t tried it but it seems like it would work.

1. 18 ounce box Duncan Hines spice cake mix
1. 14 ounce can of solid pack pumpkin

Simply mix the pumpkin and the spice cake mix together with electric mixer until well combined. (At this point you may also want to throw in some nuts or raisins, if you like.).
Spoon into paper lined small muffin/cupcake tins, 2/3 full. (The batter is very thick and doesn't "settle", so you may wish to smooth the tops if you care what the finished product looks like!).
Bake at 350* 18-22 minutes or until a knife comes out clean.

A swirl of canned cream cheese frosting and a few chopped walnuts might be a nice finish.
