Freezing Potato Salad

I bought my Independence Day food supplies last Wednesday. I bought some store-made potato salad. Since I knew it would be almost a week until I would eat it, I stuck it in the freezer which I had never tried before. That was a mistake! It tasted okay, but the texture of the potatoes and consistency was unfavorably altered. If you ask why didn't I wait and buy it the day before planned consumption - because the store is a little drive. I didn't want to drive there just to get potato salad.
 

No problem with freezing most items, except possibly altering the texture. The real problem arises when items are put in the freezer and forgotten.

I use a Sharpie to write the date on the items I put in the freezer.
 
Potato salad is so easy to make. Thanks for the inspiration. I'm going to make some today. Haven't had any for quite awhile.

I have found a way to cook the potato in the microwave oven. Hardly any tough preparation at all.

And I can select my own dressing.
 
I've never tried freezing potato salad but I have baked it with good results.

Mix the leftover potato salad with a handful or two of a grated cheese blend, dump it into a casserole, top with French's onion rings, crushed potato chips or bread crumbs and bake at 350-375 for 35-45 minutes until hot and bubbly.
