I made this recipe today with a few alternations. If you are making fried rice use one day old rice because it fries up better. Fresh rice goes mushy. For the egg I always let the white set up before scrambling it. It just looks nicer.
I downsized the recipe just for one person. I just used what I had in the fridge. Red pepper, carrots, onions, Butternut squash, and rice left over from yesterday. It's an easy to make recipe.
