Fried Rice Restaurant Style

I made this recipe today with a few alternations. If you are making fried rice use one day old rice because it fries up better. Fresh rice goes mushy. For the egg I always let the white set up before scrambling it. It just looks nicer.

I downsized the recipe just for one person. I just used what I had in the fridge. Red pepper, carrots, onions, Butternut squash, and rice left over from yesterday. It's an easy to make recipe.clown1.jpg

A long grain rice such as basmati, won't go soggy. I cook it early in the day and by the time I use it, it's perfect. Always flake it up after it's cooked, so it isn't a solid mass.
Jasmine rice as well, Pinky. The flavor of both are much better than instant rice I think. I don't seem to ever have day old rice, so I cook it up and lay it on a cookie sheet to put in the freezer for just a few minutes till really cold. Works well for me.
