Has anyone tried/had this salad?

My mom made that all the time and everyone loved it. Except for me-I don`t eat tomatoes unless they are cooked. She lived in Saudi Arabia for a couple of years in the mid 70s and this was a recipe she brought back from there. Fortunately,I was married by then so I didn`t have to eat it lol.
 

Oh yes, and it was delicious. I ate it for years.

I also cooked and ate bulgar, a whole grain, as a hot dish, which subs in for any rice or grain.
More flavorful than rice or potato, and more nutritious, and has more texture as it is a bit chewy, and it is very easy to simmer/cook.
Can season it however you like, or accompany any foods, that you like.
Hot or cold.
 
Tabbouleh or tabooley...A Lebanese salad made with bulgar wheat, scallions,
tomatoes, and parsley.

What is bulgar wheat? And is there a dressing?.

Someone at my work used to make this and it was great. You can buy the bulgar at a bulk store. You don't have to add scallions or tomatoes and mine had cucumber. You can google a recipe and adjust it to your taste. Tabbouleh is also good in a wrap with meat and/or veggies. Enjoy!
 
I make my own from boxed tabouli. This is my recipe:

Tabouli Salad

Prepare NEAR EAST tabouli according to package directions. When ready, add to taste:

chopped cherry, plum or grape tomatoes

garlic powder (or minced garlic)

chopped cilantro (or fresh mint)

olive oil

lemon juice


optional ingredients:

chopped peeled and seeded cucumber

chopped or sliced black olives

thinly sliced scallions

garbanzo beans

crumbled feta cheese

plain yogurt

I make couscous with the same ingredients - sans the yogurt. It's very tasty.
