Head cheese.

I recall as a kid every once in awhile my mom would stop at the store and purchase sliced head cheese (growing up we always called it souse) and bring it home in waxed butcher paper, maybe it's a regional food but I haven't had or seen any in the grocery stores around here in many moons and I'd pretty much forgotten about it.

Yesterday while shopping at one of the Asian grocery stores in OKC with mama I was looking around and saw some and purchased a roll......in Vietnamese it's called Gio Thu.

What I bought is made with coarser cuts of meet than I seem to recall as a kid but tastes exactly as I remembered and I had some last night for a snack and some again for lunch today with saltines.

I've got a feeling that I should have bought two rolls because I can already see that one roll isn't going to last very long. :)

My father liked it but it made me feel sick looking at it and smelling it. I never tried it.
 

Head Cheese....Good Stuff, and I, too, haven't had or seen any in the stores in years. However, there is a Mennonite store, a few miles away, that makes some great German style meats, etc. I think the next time we stop there, I may see if they make some. Now, you've got me starting to "crave" some.

Like your posts on headcheese.......but......still HATE it.
 
My mom loved the stuff and like you, would go to German delis and butchers who sold it. She was very excited to find it at Asian markets when she came out to live in the San Francisco Bay Area.

I'm okay with it, but have never been very fond of aspic. Did you know there's also a chile-spiked version?
