We like fennel but it isn't easy to find where we live..
What I like are the fronds as well which has many uses but the grocery store seems to cut them off before displaying..
Would you believe they actually throw out the fronds..
The bulb: I cut in half, take out the core, and very thinly slice the bulb..
I then make a dressing of lemon juice, olive oil, salt, and some fronds and let them sit in the fridge to marinate and we eat it just like that..........
The fronds are great in an omelette..
I also have put the cut halves on the BBQ..
