We all know the price of egg$ has been going up. Here's a nice alternative for breakfast that uses only 1 egg. :)

This looks good. I'd have to make a number of changes. Omit the egg and nuts, use pumpkin puree instead of bananas. I'd also sub sugar for maple syrup because maple syrup is expensive and too good to waste in baked items. But putting berries in would be like a cobbler but then I don't use the oven in the summer. Could freeze some for the fall.

@Remy :) Here's another recipe you might like. It has no eggs and uses apple sauce. You can leave out the nuts, of course, and substitute the milk and butter for any non-dairy alternative you like. You're dairy-free, if I remember correctly? 🤔

lol! the first time (and the last time) i cooked oatmeal with eggs... i may have reverse engineered roman cement! it came out rock hard and i wound up tossing the pot along with it's contents.

i do like both so will try this recipe one day (in silicone.)

funny you say that... because i once made a "punk'n pie" with only banana, turmeric, and cinnamon for the filling. it turned out great but i miscalculated the effects of the banana water (which was boiled skin and all.) turns out that drinking a gallon over two days wound up really relaxed by the magnesium and potassium hit.
