How varied is your diet? Fruits and vegetables? Do you consider your diet balanced?

My consumption of fruits and veggies is high because that’s what makes me feel the best physically. I limit my carbs, but make sure I get good protein.

As I was making my breakfast and prepping my lunch it hit me that my fruits and vegetables are very segregated 😂 not because they need to be, but just because I’m weird I guess!

For breakfast I have a zero carb tortilla topped with avocado, tomato, a bit of onion for extra taste, and an egg. Lunch is either a salad with chicken or Turkey, or dinner leftovers which is typically a protein (poultry, fish, occasionally lamb, beef or pork) and veggies plus a half a cup plain greek yogurt. Mid afternoon snack is a dish of mixed fruit. Dinner is a protein and various veggies and or big salad. Before bed snack is an apple, orange, or whatever other fruit I have on hand.

Somehow I’ve worked my food schedule out so that I don’t ever eat fruits and veggies together, but so that I get lots of fruit and lots of veggies regardless. I think, because I eat little carbs, I’m compensating with more fruits and veggies.

Here’s today’s fruit bowl: pineapple, cherries, grapes and strawberries. I vary the berries, do orange and apple slices with raspberries, I’ll add kiwi and mango .. whatever looks good in the produce section when I do the weekly shopping.

Veggies are always broccoli, zucchini and yellow squash, green beans, asparagus, carrots tomatoes. Once a week we’ll have a baked potato, either russet or sweet. I’ll mix things up and add eggplant, turnips, parsnips, leeks. Salads are all the usual, plus green onions, beets, bell pepper, celery, cucumber, sometimes cilantro or basil, mushrooms.

Our diet is very varied because we like so many different foods and because there’s little in the way of grains or other carbs. We’ll have beans on occasion, in soups or a chili dish or a Mexican skillet meal. If we have spaghetti, I’ll have the red sauce over spaghetti squash or zucchini spirals, though Ron will usually have whole grain noodles.

What about you? How varied is your diet?
