I love making homemade soup

I started making homemade soups in early October. I have about 25 different types of herbs growing in my garden and use 2 or more in every soup. Currently I am loving a herb called winter savory. It is an old timey herb used heavily way back in the medieval days. It has a peppery flavor but doesn’t really taste like pepper. It’s fantastic in soups and stews. Right now I have a large pot of minestrone on the fire . I love the smell of the fresh herbs simmering away. I can’t do store bought soups because of the outrageous amount of sodium. is anyone else making soup this season?

I love soup especially in the winter. I usually make my own soups except I keep Campbells Chicken Noodle Soup on hand in case I ever get sick and don't feel like making any. I guess that's something I've carried over from childhood.

So do I @RadishRose just yesterday I bought a 1/4 of a ham leg for us and I’ve already cut part of the bone off , the ham and put it in the freezer for when I next make a pot of stock …I usually use chicken scraps / bone and ham bones to make a base, I freeze my stock in 1 ltr Italian brand preserving bottles

I agree @Sirensong about the salt , I bought a can of soup while away during winter ( in Australia ) it was minestrone but it was watery bland and salty ….blah .:sick::sick:

Actually, it looks pretty good, but I use beef broth in mine. Other than that, I like the recipe because it's simple. A lot of French Onion soup recipes use wine or some type of alcohol. I'm not a fan of alcohol in my food. It's a taste thing.
