I made Vegetable soup yesterday

2 Large Onions
1 Green Capsicum
2 Large Celery Stalks

Saute above for 20 minutes in Olive Oil

Add 1 Litre Vegetable Stock
1 cup dried split peas - pre soaked

Simmer further 20 minutes

Add
I head of Broccoli
1/4 Green Cabbage

Simmer further 20 minutes

Add
1 Tsp Garlic
1 Tsp Keens Curry
500g jar Bolognaise sauce
1 litre boiling water

Simmer further 30 minutes

Puree all
Makes 4 litres

I've never used capsicum, but that sounds spicy, hot, and peppery, right?

Curry, I just never cottoned up to. Wish I did.:confused:

Bolognaise sauce? Never used that. o_O:sneaky:

I like carrots in mine.... and celery or lovage or bay leaves or basil....
White beans or lima beans would also be nice for me.

Soups can be tweaked for individual needs and likes, and for what one does or doesn't have on hand. One of the great things about soups. (y)

The soup was tastier than I expected.
Subtlety was the key. Capsicums (Bell Peppers) have a nil heat factor.
On the Scoville heat scale they rate 0 points.
That is why I added the curry powder. Perfect amount. Not overpowering but a great full flavour.
Keens Curry powder is a mixture of turmeric, coriander, fenugreek, black pepper, chilli, allspice and celery.
The Bolognaise sauce had been in the pantry for months. Great way to use it.
Next soup will have a cup of raw chopped cashews added.
I have had the soup for lunch at wok this week. Filling and flavoursome.
