More expensive that real salmon??? Nothing is more expensive than salmon. Well... lobster, and truffles. OK, I take that back. Somethings are, but they're not on my grocery list. The quality of salmon, where taste is the unit of measure diminishes greatly by the time it makes it to the grocery store. I prefer it when I hoist it out of the water using a hot greased fry pan instead of a net. I'm not trying to be an elitist. I'm just aware of fresh caught. But I'm guessing the baseline for lab salmon is how it measures up to grocery store salmon, so will have a new standard.
I actually eat a lot of store salmon. I eat it for the protein and nutritional value, and every time I eat it, I have a bittersweet memory of the salmon I cooked right on the boat I caught it from.
