I thought it would be fun with Christmas coming and gift giving time to post some simple and easy treat recipes to share.

Please post yours!

ingredients For nutty o's

1/2 cup brown sugar, packed

1/2 cup dark corn syrup

1/4 cup butter or margarine

6 cups cheerios

1-2 cup peanuts
you can add salt if you like.


Heat oven to 325. Butter a 15 x 10 x 1 pan.
Heat sugar, syrup, butter and salt in a 3 qt. saucepan until sugar dissolves.boil 5 mins.
Remove from heat and stir in the cereal and the nuts until well coated.
Spread in pan and bake 15 minutes.
Cool 30 minutes and then loosen with a spatula and break into pieces.
Enjoy!
 

This is Emily Norcross Dickinson's (mother of the poet) recipe for Gingerbread.

1 quart flour
1 cup butter
1/2 cup cream
1 table spoon Ginger
1 tea spoon Soda
1 tea spoon salt
Make up with molasses ----

My Mom's easy Candied Yams...Peel and quarter oblong potatoes, cover with water and par boil, only long enough to stick a fork in them. Empty water and place potatoes in oven oblong pan.... add a stick of butter and 2 cups of sugar, cinnamon and nutmeg...bake in oven for an hour or so or until sugar has been reduced to a thick syrup.
 
If you like dark chocolate, here's a super easy no bake recipe, I make them all the time:

Dark Chocolate Yummies

1/2 package of unsweetened Bakers Chocolate (2 oz. chocolate)
1 heaping tablespoon peanut butter
1/4 cup Lakanta Monk Fruit sweetener (or sugar)
1/3 cup Rice Krispies (or rice Chex) cereal

Optional ingredients:
1 heaping tablespoon unsweetened coconut (optional)
1 heaping tablespoon dried cranberries (optional)
1 tablespoon almond meal

In a smaller bowl, cut up the chocolate and melt it with the peanut butter in the
microwave for just a minute or so.
Stir in remaining ingredients and drop small spoonfuls on foil covered plate - freeze for 15 minutes.
Store in zip lock bag in fridge. Makes 24 pieces.
 
These are a favorite in my family:

Citrus Balls

1 box finely crushed Nilla Wafers
1 stick salted butter
1 small can frozen concentrated orange juice
1 box powdered sugar.
8 oz flaked coconut

Cream sugar, butter & juice (undiluted) til smooth.
Add crushed wafers
Mix well

Chill 30 minutes and roll into small balls
Roll balls in coconut.

I've never tried, but I bet these could also be made with frozen concentrated lemonade.

Keep chilled. These can be frozen.

It's a pretty intense flavor but they'll make your mouth stand up and salute!
 
I'm pretty limited as to what I can eat but my year round treat is a Nut Thin (Pecan) with almond butter and 3 dark chocolate chips on top. About 33 calories each, no gluten & very little sugar.
