Micro-greens and sprouting, an easy wintertime indoor garden.

I have one of the little jar sprouters and I usually make sprouted fenugreek seeds. They are similar in size to alfalfa sprouts, but more robust and with a spicier flavor .
Sometimes, I sprout lentils or bean sprouts, but those are a little large for salads, so I use use those in a stir fry dish.
I want to try growing micro greens, and so I bought a tray style sprouter from Amazon, and am going to use that to try sprouting and growing the lentils and other legumes, and see how they work as a micro green instead of just sprouting them .
Greens are something that is very healthy , and I like growing my own greens and also harvesting wild edibles for greens in the summer, but winter is not much good for that.
Does anyone else do sprouts or micro greens, and if so, which kind do you grow and how do you use them once they are ready to eat ?
