Mom's Marshmallow Frosting

In summer I make a lemon tart ,with a marshmallow topping
it has a baked pasty base .
However it’s a once in a while summer treat šŸ¦

I love anything lemony and as I have my own tree I make the filling with extra lemon to get a tarty taste , after filling is added to the cooked base and cooled add the marshmallow topping ..yum yum
 
My mother always called it 7 minute frosting.
After a day or so it would get brittle.

The frosting I used for the kids birthday cakes.
Started with 5 tablespoons flour mix with 1 cup milk, cook/ stir till thick,let cool.
1 cup sugar1 cup butter or 1/2 cup crisco & 1/2 cup oleo.
Beat on high speed till like whipped cream. Frost cake & refrigerate

Loved the 7 minute frosting! Have not made it in years. Cake is okay but my fav dessert is pie. Love fruit pies . My mother made the best pie crust. She made it look so easy but I could never get it right like hers.
 
Have fond memories of my mother's cakes & miss them.

Only cake hubby seems to like is Boston Cream pie/cake.
A local grocery makes them so when he's in there for milk one or 2 to come home with him.
I've gotten tired of eating them.

Any on ever have chocolate cake made with mashed potatoes?
