My version of Chicken Mole (Ok, so, I cheated a tad.)

My favorite food to cook is chicken mole. It’s a well-known Mexican dish that I've been cooking for many years. I use DOÑA MARÍA® mole sauce. It has the same rich flavor as if it was prepared the old fashioned way. And it cuts the cooking time by an hour or more.

The scent from the spices cooking reminds me of when I was a little girl. It took me a long time to get my mole sauce to come out just like my mom’s. Of course, hers was from scratch.

Here is my recipe:

Ingredients:
1/4 tsp garlic powder
1/2 cup sugar (my own creation)
3 cups chicken broth
1 small jar Dona maria mole sauce

Instructions:
1) Boil as many chicken breasts (with bone) in water as needed until the chicken is tender. Be patient. Keep checking to see that you have plenty of liquid to help boil that chicken. lol

2) When done, let cool and debone.

3) Save the broth! Strain it really well. I do it twice.

4) Add the broth to a large saucepan and add the mole sauce, sugar, garlic powder and stir so it doesn't clump up. Keep on stirring until you can see that the consistency has thickened some. It can't be watery. So, be sure to stir until thickened.

5) Add your shredded chicken pieces. You may use dark meat too; hubby doesn't like it so I use chicken breasts.

I am so planning to try this.

There was a Mexican joint in Chicago that I used to regularly frequent, that had the best mole sauce. I raved about it so much, that the owner eventually shared that his mother's secret was to add some rich, dark chocolate.

It's really rural where I'm at, so crossing fingers that I can find me some Dona Maria locally, but then there's always Prime.

@PamfromTx this sounded really interesting. I looked it up online because I didn't know much about it and don't blame you for using the paste. The different spices that go into this is unbelievable.
I was wondering how you serve this? I saw it served alone, on top of chicken or corn chips or on buns.
Your recipe is very easy to follow. If I can find the paste I will make it. Nice that you use the whole jar. When trying something new I don't want to have a lot left over especially if I don't care for it.

I serve it with freshly cooked pinto beans, Spanish rice and tortillas (from the store; this is another item that I've never made). I'm not much of a true Mexican American cook like my two older sisters. Mom didn't teach me to cook and she didn't want me in the kitchen while she cooked.

What truly surprises me is the fact that my father didn't encourage me to learn to cook; he was very strict and did demand that we clean the house.
