It is easy to make- basically creamed chicken & veg in a crust - as long as you buy the crust ready made. (Pie crusts and I have a long history ... and not a good one). You could use tofu for the chicken, and (I guess) oat milk for the milk that goes in the gravy. I know there are recipes for pie crusts made with oil on All Recipes.Pot pie was one of my favorite things. One of these days I'll make a meatless one. I never have made one from scratch.

You pot pie looks like the type I really like. A flaky crust and bigger vegetables. I hate those frozen ones with tiny and sparse vegetables. Fill it up! If I buy a frozen one (and sometimes I do) I buy Marie Callender's larger sized ones. I had to buy a special dish to bake it in my toaster oven but sometimes a girl just has to have a pot pie on a short notice!
I eat plant based. I like soy milk best for cooking. I've wanted to make one for a long time but I'm a lousy cook and I don't like to cook. But one of these days I will make one. I don't know if you are a Vegan or a Vegetarian.
