I'm not a huge meat eater tbh.. nor in fact a great Chop suey lover.. but I do enjoy a beef Chop suey from the Chinese take-away..occasionally, it looks like this here..
I like it, but always thought it was a dish invented here in the US and sold as Chinese. However I may have been wrong:
Chop suey is widely believed to have been invented in the U.S. by Chinese Americans, but anthropologist E. N. Anderson, a scholar of Chinese food, traces the dish to tsap seui (杂碎, "miscellaneous leftovers"), common in Taishan (Toisan), a county in Guangdong province, the home of many early Chinese immigrants to the United States. I have definitely seen some very diverse dishes, called the same name as this, in different parts of the USA.
Such completely different ingredients, flavors, and styles, surprised me at first!
But I got used to the idea, that the people of a large region, know what foods are called what, there!
So they would know whether they want to order it, or not!
