I've watched fudge being made at little shops in tourist towns. It seems like a complicated process. Is it?I always make my own fudge. Double layer PB and chocolate.

I can do that, but a candy thermometer makes it much easier.The hardest part for me, with the old recipes, was determining the soft ball stage with a glass of water.
