National Pineapple Upside Down Cake Day - April 20th

Oh! Yes..first..my Mom.. made the best..
Then....it became a favorite in our house.
Haven made for a while.
 
Back in my college days I made a wonderful pineapple upsidedown cake. That and carrot cake were two of my favorites. What is it about me putting fruits and veggies in a cake.

My mom's favorite dessert. Could be because she was an awful cook and a worse baker, LOL, but she could make a pineapple upside down cake that was to die for.

I'll take mine with a dollop of whipped cream, please.
