National Taco Day - October 4th

I love a good taco with all the works on it once in awhile. I especially like to put sour cream and guacamole on it!

What???? It was National Taco Day TODAY?!

I didn't know and I MADE TACOS TONIGHT and last night and the night before...and I TOOK THIS PHOTO to share with SF before I even knew it was Taco Day. I'm actually going through an obsession with Tacos right now, as if you hadn't guessed. Well, I do this until I've perfected something and then I'm over it and on to something else to perfect.

This is my homemade Fish Taco pictured but also tried Chicken, and Barbacoa
because I was afraid of too much fish (can be toxic if too much maybe).
Fish is my fave! I added 7 ingredients to soft corn tortillas...all fresh

Black beans (I cooked with fresh garlic, cilantro, cumin, salt, onions)
Beer-battered fried Wild Caught Cod with Lime squeeze
Guacamole (but prefer just fresh Avocado plain sliced)
Red cabbage slices
Sour cream
Baby kale
Fresh tomato salsa

What a beautiful presentation. Reminds me of the tacos that my sis-in-law prepares. She is a health nut.

I pour some guacamole salsa that I buy at our grocery store on my beef tacos. A bit hot but so delish.

As much as I would have liked to have tacos for dinner, there wasn't enough notification. We didn't have the ingredients necessary for a taco dinner, so we had leftover pizza from Jets. Perhaps we'll celebrate later this week.
