OK, what are we going to have for Thanksgiving dinner?

For over a decade, this will be the first Thanksgiving/Christmas we will spend at home. We are typically on a cruise ship or in another country, Last year we were in Galway, this year due to the pandemic, we will not travel, so we are planning our Thanksgiving at home, We are celebrating as a family, just the two of us and maybe Gaer.
I'm not much for Turkey, I would rather see him walking that roasting, so I'm as close as you can get to a Vegetarian. The wife on the other hand...watch out bird! So we will probably have Roasted Turkey for the wife, Garlic Mashed potatoes, Noodles, green beans, roasted sweet potatoes, cranberry-walnut salad and home made rolls. Oh, I forgot stuffing...I love stuffing
So what are you planning for your meal?
 

Turkey, celery/onion/cornbread dressing aka stuffing, mashed potatoes, giblet gravy, streusel topped sweet potatoes, green beans, cranberry relish, homemade rolls, pecan pie, chess pie.
Chess Pie? I have never heard of that before. An Giblet gravy, I have not heard of that or had it since I left home. My mother used to have it often. Thanksgiving always brings up a lot of the past.
 
Now you have me curious. Mother in law maybe....
Well here's the deal...I work in a hospital kitchen. The area hospitals in KS are filling up with Covid patients and some of my co-workers have been exposed to Covid and are still working. There were four of them altogether. One went down. The other 3 we're still waiting to see. If they go down that means we will have an even more limited amount of staff and I wasn't sure I'd be off on the days granted to me to make my dinner and enjoy it. So I did it early. I know that sounds stupid but I didn't want to get all that chicken defrosted and be too tired to do anything about it if I got stuck working all the time to cover slots in the schedule.

NO, that's not stupid at all. I/we certainly appreciate your effort to maintain the hospital. My son lives in Prairie Village, KS ( kansas City basically) and tells me it is getting very bad there with all the hospitals filling up. It a difficult time. But thank you for your efforts.

It is starting to get bad here. I keep waiting for that phone call that I need to come in because they don't have enough staff. I don't know how bad things are gonna get. I know KC has had a terrible time with it. Or should I say Johnson Cty?

Sorry, Thats what happens when you think, talk to yourself and type at the same time......MY thought Was, I'm curious about that, I have to find some of that somewhere, wonder who I could ask, Mother in law maybe... See how busy it is in my mind!
 
One of my fave dishes to make for Thanksgiving is an updated version of my mom's sweet potato pone. I cook the sweet potatoes and mash them like she did, but I don't put in as much butter and no sugar. Instead, I sprinkle in cinnamon and mashed up steamed apples. Lovely, light, and pleasantly (no sicky) sweet.
 
Already had my thanksgiving spread. I had chicken and stuffing and mashed potatoes and cranberry salad and corn and some chocolate pudding.

Ok, since I seen your one post, had to change mine. Actually, MarciKS, I know the farm/ranch land of Kansas. As for big cities, like KC, I try very hard to stay away from. I get along with livestock much better. LOL
