When the week-end approaches, and pro-football is in the offing, my mind turns to what I'll make for Sunday's big game.
This Sunday, I'll be making Sloppy Joe's.
1 lb ground beef
2 tblsp veg oil
1 cup finely chopped onion
2 sticks celery, chopped finely
1 green pepper, chopped
1/2 tsp oregano
1/4 tsp garlic powder
1/2 cup catsup
1/2 cup spaghetti sauce
2 tblsp red wine vinegar
1 tblsp Worcestershire sauce
2 tblsp brown sugar
1 tsp salt
1/2 tsp blk pepper
Well toasted SOFT rolls

fry beef, and break-up pieces as you cook.
drain beef and set aside
in a separate fry pan, add veg oil, onions, celery, and green pepper.
fry over med low heat until onions are well wilted.
Put beef back with cooked vegs
Add catsup and spaghetti sauce
toss in oregano, garlic powder, red wine vinegar, Worcestershire sauce, brown sugar, salt and pepper.
simmer over VERY low heat for 20 minutes to marinate ingredients. (add a splash of water as necessary to keep Sloppy Joe mix "sloppy" and to keep it from burning)
When ready to serve, toast the rolls under your broiler/toaster oven.
Tastes vary, but keep in mind that Sloppy Joe's are called that for a reason … sloppy.
