I make a fine egg casserole for holidays. The recipe came to the family through my husbands aunt. She lived in San Antonio so we did not see her often. When she found a good recipe, she shared it with all the girls in the family. My MIL made it first!! It was loved by everyone and became a staple.
The recipe is named, Layered Eggs and Mushrooms. I think it came from a southern living magazine. MIL served it with sausage balls, biscuits with honey and cinnamon butter. There was always a huge fresh fruit salad on the table.
The casserole could be put together the night before and be ready for the oven in the morning, the special butters, the fruit salad all made the night before as well. The sausage balls were always in the freezer. All the girls in the family would spend some afternoons, sitting around the kitchen table, mixing them and rolling them for the freezer, fun days!!
Most everyone is gone now but I still make this for Christmas morning. I cut the recipe in half, I still make sausage balls for the freezer, the butters are easy. I don't make the biscuits,they come from a can or the freezer section. Since it is just me, no fruit.
