Pumpkin Pie without Evaporated Milk

I picked up two different brands of canned (tinned) pumpkin puree at the senior center. Each had a recipe for pumpkin pie on the label. Each called for evaporated milk. Could 1% milk be used? Why evaporated?

I tried making evaporated milk (or maybe I was trying to make sweetened condensed milk) once in the microwave. Took forever - never again!

@debodun - Here ya go, a few Pumpkin Pie Recipes that don't use evaporated milk. I'd recommend using one that contains cornstarch. That helps the pie to set up properly.

My late mother always used Carnation Evaporated Milk in her coffee as a creamer. I suppose it is still available, but at this point Pumpkin Pie would be a big no no.

Evaporated milk or heavy cream will result in a richer pie, but you can use whatever milk you have on hand with good results.

You can also skip the crust and bake the filling as a pudding.

I always have evaporated milk as well as canned pumpkin in my pantry. Also stock apple and cherry pie filling. There is always something you can make that call for any one of these items.
