Re-visiting my re-fried beans recipe.

Periodically I re-visit one of my old recipes. Tomorrow it's re-fried beans. My old recipe is ok I guess, but I have been getting "flash backs" about the Mexican restaurant, in Denver, that was a favorite of mine .So tomorrow I'll play around with adding bacon grease, sauteed onions, fresh garlic and perhaps a small amount of cumin.
PS: the re-fried beans in that Denver Mexican restaurant were the very best I've ever had.

Mine is simple mash cooked pinto beans, add a spoonful of shortening and a lot of grated cheese. Refrieds are not actually fried.

Actually, they are fried. In Spanish, refritos means "well fried". It does NOT mean fried TWICE. If you look it up on the net, you will discover dozens and dozens of recipes for refried beans and nearly every one of them requires frying.

My experience south of the border had them frying the fixin's in lard, then adding cooked beans for a spell, then mashing the devil out of them and then adding some more lard and frying again, or some more. That may or may not be frying twice, but it did seem to be re-fried, imho. Pretty tasty, although probably not so healthy. :)

Yep, no doubt about it, adding fat to the beans is a major flavor enhancer.
I agree, lard is not healthy. My personal choice is to fry beans in bacon fat. Bacon fat may not be healthy either, but it certainly adds a great flavor.
 
Final results came out pretty well.
Soak 1 lb of beans at least 10 hours. (tip: do NOT buy beans from a bin. They are often waaaay too old. Buy the ones in a plastic bag) Using plenty of water, cover the beans with at least 3-4 inches of water. They will expand greatly.
The next morning, drain, and discard the soaking water.
Place beans in pot and add water to cover by 3 inches . Turn heat on med-low.
saute large chopped onion in butter until soft and SLIGHTLY golden brown.
Scoop onions in with beans.
Add 1 full TBLSP of finely chopped garlic.
Gently simmer until beans are extremely soft.

SAVING ALL LIQUID, drain beans.
Using a heavy frying pan, heat 1/3-1/2 cup of bacon fat.
Add beans and allow to fry before turning them over.
Continue frying beans.
Now, start to mash, mash, mash until super smooth. Adding SAVED liquid as needed.

Taste and add salt and black pepper to taste.
Now, i added a tiny amount of ground cumin. (optional)
As i said before, there are thousands of refried bean recipes. It is all a matter of what suits you.
