Roasting rack for small bakeware?

Because I live alone, I cook in small batches. The vast majority of my baking is in the toaster oven.
Some recipes call for a roasting rack.
I know that a common solution is to use potato chunks; but I don't buy potatoes as I'm diabetic.
Is there another solution?
 

Buy the potatoes. You are allowed some carbs and I heard red potatoes have less carbs. But maybe you want to save your allowed carbs for bit of ice cream, lol and I wouldn't blame you. Try the fatter baby carrots or cut carrots. I know they're a carby veg, but that little bit would be fine I think.

This is course, only if that nice pan is the wrong size.
 

Just look around the kitchen and use what you have.

Try making an aluminum foil snake or coil to set the roast on.

You don't have to use new foil, save and wash the aluminum pans from store bought baked goods. Your rack doesn't have to be perfect just scrunch up the used tins or punch holes in them to create your own disposable rack.

For roasting a chicken use the TNT method of setting the whole chicken on an empty beer or soda can. I do that but I have to take out one of the oven racks to make it work.

Try a few canning jar rings!

If you have a gas stove you can even use the burner grate for a rack.
