Secrets to peeling hard boiled eggs

We've all encountered the hard boiled egg that was hard to peel without taking junks of the egg off with the shell.

I just learned a new trick that makes eggs easier to peel. Place the egg in a container with a lid. Fill the container with water, over the top of the egg, place the lid on securely and shake the heck out of the container. Remove the egg and easily peel it.

What is your secret to peeling a hard boiled egg?
 

Use older eggs!
Very fresh eggs stick closer to the inside of the shell.
After cooling, break fatter end, insert thumb into the space and start peeling/rolling and peeling.

Dump cold eggs into hot, boiling water. They will crack and leak, but will peel easily. I don't like this method.

Yep, use older eggs—at least a week old. The membrane between the shell and the egg itself sticks like a motherf'er on fresh eggs, making them much harder to peel. When the eggs are cooked, immediately plunging them into ice water for several minutes also helps to loosen the shell. Then remove them from the ice water, pat them dry, and roll them. The shell should loosen sufficiently to peel easily.

Now go and make some deviled eggs or whip up some egg salad. 😊
