I use the numeric day of the year to determine freshness when buying eggs at the market. That number is printed on the carton along with the sell by (or use by?) date as a 3 digit number. The day of the year is the date the egg went into the package. If I'm remembering it correctly, eggs are usually washed and packaged within a week of being laid. I don't think there is any set, industry standard for the sell by (or use by?) date so I don't pay any attention to it.
