Simple small-batch roll/biscuit/muffin recipe.

I saw this old roll recipe on FB the other day and it was a flashback to the 70s.

It's a good little emergency shelf recipe for 5 or 6 rolls that are best eaten fresh from the oven.

1 cup AP flour
1 t baking powder
1 t salt
1/2 cup milk
2 T mayonnaise

Combine ingredients, portion into a greased 6 muffin cup pan, and bake in a preheated 350F oven for 15 minutes.

This is a very forgiving recipe and can be baked at 425 - 450F for 10-12 minutes.

If you are using self-rising flour you can eliminate the baking powder and salt.

Yes.

When I make them I usually end up with 4 larger rolls that I bake in small 4-ounce pyrex custard cups. The recipe can be scaled up to suit your needs.

I've topped them with a mixture of cinnamon and sugar to have with coffee.

I've also made them with 1/4 cup of shredded cheddar cheese and some onion powder, garlic powder, and a pinch of cayenne.

If you expect them to be like a yeast dinner roll you will probably be disappointed they are more on the order of a quick bread style muffin or biscuit.

Well I finally tried it and I’m giving it great reviews.

I’d made boring stew and decided it needed biscuits on top. So, I thought of this in the morning and forgot about taking the out the butter required. Then I found @Aunt Bea’s recipe using mayo. DH loved them too.
