Spicy Roast Chicken



A spicy take on the traditional roast chicken.

Ingredients
1 medium chicken
100mL water
85g plain yoghurt
1 tablespoon lemon juice
1 tablespoon crushed garlic
1 tablespoon crushed ginger
1 teaspoon chilli powder
1 teaspoon salt

Method
Preheat oven to 200 degrees.
Place chicken on a roasting rack, or trivet in a camp oven, or a roasting dish.
Mix the marinade ingredients in a bowl and smear the chicken with about half of the mixture.
Cover in cling wrap and allow the chicken to sit until it is at room temperature.
Remove the cling wrap and add the water to the roasting dish, cover the chicken in the remaining marinade and place it in the oven or coals.
Roast for half an hour then remove to baste in the marinade, from then on baste it every 20 minutes or so, until a skewer inserted runs with clear juices.
Roast for around 70-80 minutes in total.
Serve with salad and rice, or use cold in sandwiches.
