St. Patrick's Day for One

Place a serving of coleslaw mix (not a kit with dressing, just shredded cabbage and carrots) in a bowl. Dot with butter. Sprinkle with salt, pepper and onion powder to taste. Nuke 2 minutes. Roll up slices of deli corned beef and place on plate. Spoon cooked slaw onto plate. (I didn't bother with tater tots this year since I had a lot of pistachio cake to clean up), but add them if you want).

Back in the good old days when my husband and inlaws were alive we always spent St. Patty day at there house. FIL's birthday was the 19th so we celebrated both with all the family. Menu was always ruebens with freshly baked corned beef. FIL would get out the big meat slicer and slice it really thin for the sandwiches, sauerkraut, swill cheese and dark rye. They used russian dressing on theirs. Sides, potato salad and coleslaw, MIL made the best.

Thank god she taught me how to make it. Still not as good as hers but tasty. I don't do it on the day but will get some corned beef for the freezer when they get marked down in April. I make a big batch of the salads and get all the stuff for the ruebens. This is when I call the son and he comes over to get some of everything for them to enjoy.

Of course in Texas the weather is lovely, in the 70s at this time. We would lunch out by the pool enjoying the day. Play games, talk and enjoy just being together. I guess I was silly, I thought this would last forever, ended way to soon.
