Nothing "brings in the holidays" like the smell of gingerbread.

But before the decorative cookie led the populatity contest of the holiday desert table,
baking gingerbread was acknowledged as a specific profession.

In the 17th century, only professional gingebread bakers were allowed to make gingerbread,
except at Christmas and Easter, when anyone was allowed to bake it.

Yes. When I was married to my ex-husband we made a huge gingerbread house for a social event with our friends. It took us 4 full days to accomplish it. People ate it! I was so shocked. It was about the size of half of a rectangular table that seats 4. Big to me.

I will never do it again. Too much work. My gingerbread contribution now is gingerbread people. I hang them on the Christmas tree, and I don't care if they are eaten since my kids love them.
